Bromelain

Bromelain is a group of thiol hydrolyzing proteases extracted and refined from pineapple plants by biotechnology. Its molecular weight is 33000, isoelectric point is 9.55, and its molecular structure contains an oligosaccharide molecule composed of xylose, fucose, mannose, and N-acetylglucosamine. Bromelain mainly comes from plant stems, so it is also known as stem bromelain.The reaction temperature of bromelain is relatively low, between 37-60 ℃, and the optimal temperature is between 50-60 ℃. The most suitable pH range is 6.0~8.0.
